The Perfect Breakfast: The Mediterranean Omelet

Breakfast, the ever-elusive meal that sometimes escapes all of us. If you want a little inspiration to eat in the morning, then we suggest making that boring omelet Mediterranean style. The Mediterranean omelet has a much fuller taste than the traditional omelet but is just as easy to make. Our version of the omelet uses a few herbs, roasted red peppers, and gorgonzola cheese. If you want to make it on your own, here are a few ingredients you can try:

  • 2 large eggs
  • 1 ½ teaspoon parsley
  • 1 ½ teaspoon herbs (basil, oregano, thyme)
  • Chopped scallion
  • 2 tablespoons black olives
  • ½ tomato
  • Red pepper
  • Garlic clove
  • Ounce gorgonzola cheese
  • Teaspoon olive oil
  • Teaspoon lemon juice

First, make sure the scallion and garlic are chopped, your olives are pitted and sliced, the tomato is diced, and your red pepper is seeded and chopped. Once you prep those ingredients, mix olive oil and lemon juice with pepper, tomato, garlic, and parsley in a small bowl.

Put that mixture to the side and in a separate bowl mix the eggs, milk, and herbs. Heat a non-stick pan over a stove top in medium. You are going to pour your egg mixture into the pan. Make sure it covers the whole pan and cook for 2 minutes. When it starts to brown, add in the vegetable mixture and cheese, then fold the omelet. Cook for a bit, then serve.
